Tonic is a non-alcoholic drink whose raw material is quinine and consists of soda and botanical mixtures.

Cevat Yıldırım's tonic recipe:
1 liter of water
75 gr. chopped lemongrass
22 gr. quinine
33g. citric acid (lemon salt can also be used)
peel of 1 grapefruit
peel of 1 lemon
peel of 1 orange
1 allspice grain
5 cardamoms
2 star anise
1 teaspoon of salt
Put all the ingredients in a deep pot and boil over low heat for 15 minutes. Let it cool at room temperature. Put it in a glass jar and store it in the refrigerator for 2 days, stirring occasionally. You can filter it into glass bottles and use it for 15 days.
The resulting mixture becomes the tonic sauce.
To make 1 glass of tonic, mix the following:
4cl sauce,
3 cl sugar syrup
12cl soda
